Summer Game Drinks and Eats with a BONUS

Thirsty Thursday and Game nights together, who doesn’t like to play games inside when it too dang HOT outside? I love playing Card Games like Hand and Foot, Five Crowns and of course domino games like Mexican Train. Even better combine a good game with a small pot luck or surprise your guest with an easy cocktail, appitiser and dinner including a BONUS dessert…

Sorry kids we have been so busy this week not much got done on our Blogs so today is a triple hitter with a BONUS. Not only a great thirsty thursday cocktail but a great game night snack and a pot luck dinner. Oh yeah, Triple the Goodness and don’t forget the BONUS, so let’s get started…

First up an awesome drink of the week.

Mermaid Water

2 oz (60 ml) Captain Morgan Spiced Rum
 1 oz (30 ml) Coconut Rum
 6 oz (180 ml) parts Pineapple Juice
1/2 oz (15 ml) Lime Juice
Top off with Pineapple Juice
Splash Blue Curacao
Lime Wheel Garnish
Next up a delicious party type game night dip/appitiser…
Cajun Crawfish & Spinach Dip
2 tbs butter, diced gr bell pepper,

Cajun spice, Tabasco,
1 lb cooked crawfish tails,
10 oz thawed spinach,
8 oz cream cheese.
Sauté peppers in butter, then add rest of ingredients heat until everything is mixed
Place In baking dish, top with a little Parmesan cheese
Bake until bubbly, serve with bread or crackers
Last BUT not least Dinner…
Ninja Cajun Sausage and Shrimp Gumbo
3 T flour
3 T oil
1/2 pound smoked sausage, cut into 1/2 inch slices
2 cups frozen cut okra TIP quick fry okra to cut down on the slim
1 large onion, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
1/4 tsp ground red cayenne pepper
1/4 tsp pepper
1 can (14.5 ounce size) diced tomatoes, undrained
1 package (12 ounce size) frozen shelled deveined cooked medium shrimp, rinsed
for the Rice you’ll need…
1 1/2 cup uncooked regular long-grain white rice
3 cups water
In the Ninja, Quick Fry Okra first, remove and set aside
Next combine flour and oil, mixing well, cook, stirring constantly, over medium-high heat for 5 minutes.
(This will make your Roux which is the base of your Gumbo)
Reduce heat to medium cook, stirring constantly, about 10 minutes or until mixture turns reddish brown.
Stir in all remaining ingredients except shrimp, rice and water.
Cover and cook on the LOW for 6-7 hours.
Stir in shrimp to gumbo mixture mixing well. Cover and cook an additional 15 minutes.
When Gumbo is ready to serve, cook rice in water as directed.
Serve gumbo over rice.
Oh My Goodness, I think I’ll throw in a BONUS today. We have a great cocktail, a wonderful appetiser and for the finally a yummy spicy one pot dinner. Let’s just finish off the day with an awesome Dessert…
How does this sound? AND it do not get any easier than this my friends…
Crockpot Dump Cake
1 box yellow cake mix
2 cans of Cherry pie filling
1 stick of butter
Lightly grease crockpot with butter or nonstick spray, or use a liner
In a large bowl, cut cubed butter into cake mix and mix together until butter is coarse and crumbly.
Pour cherry pie filling into crockpot then evenly sprinkle cake topping over cherry filing.
Cook on HIGH for 2 hours, or until cake is golden brown and cherry filling is hot and bubbly.
Serve hot, with a scoop of vanilla ice cream.
**NOTE** Any fruit filling can be substituted
