Just a Bump in the Road

I’ve been under the weather the past few days but I’m on the mend. Woke up Sunday morning with a really tight chest. I gave myself a breathing treatment, I keep medicine and a breathing machine close at all times, I never know when I’m gonna have an attack. Went to the Dr first thing Monday morning, got a shot and 2 prescriptions. I am already feeling a bit better today, Tuesday, the very next day. Yeah… if I had not gone at first onset I probably would have gotten much sicker.

For today’s meal, I’m going to make some Cajun Blackened Fish with a Baked Potato, a Green Salad and Garlic Bread.

 Cook it  in a Cast Iron skillet

I’m cooking mine in a Cast Iron skillet on my Induction Cooktop

Cajun Blackened Fish

For the Fish
1 lb Cod Fish
1/2 lemon, juiced (reserve zest for butter)
2 tablespoons Blackening Spice
Lemon wedges for serving (optional)
Fresh thyme springs for garnish (optional)
For the Cajun garlic butter
1/2 stick unsalted butter

2 cloves garlic, minced
1 teaspoon finely chopped grated lemon zest or juice
1 to 2 teaspoons Blackening Spice
1/2 teaspoon finely chopped fresh oregano
1/2 teaspoon finely chopped fresh thyme
Splash Worcestershire sauce

Directions for Fish
Sprinkle with the blackening spice over the Fish, let sit 10 minutes or so (refrigerate if it’s going to be much longer before cooking)
Broil in the oven uncovered or cook in cast iron skillet or grill it, until Fish is done.
for Cajun garlic butter
Simply toss everything into a small saucepan over low heat and let it melt, stirring occasionally.
Keep warm until ready to serve.
