Fishy Friday

Yes, Yee Haw, it’s Friday kids… It’s the weekend!! I know not everybody is as lucky as us to be full time. But we can all agree we love to eat great food with little prep and cook time.

Today we going to take our fish in a whole different direction. You don’t always have to FRY your fish for it to be flavorful, it can be just as flavorful while being healthier at the same time. That’s right y’all, we’re going to be Grilling our fish in a foil package. SO YUMMY TOO!

You can use any fish you like Catfish, Tilapia, Cod etc… I prefer a mild white fish because the hubs doesn’t really like fish so I have to cook the least fishiest fish I can find. I hope that last sentence that makes since to you, you know I have such a way with words… LOL

Fish in a Foil Packet
4 fish filets
a little olive oil
4 squares of foil, large enough to seal around the fish
Tony Chachere’s seasoning or what ever seasoning you like
fresh dill sprigs
lemon slices
Rub a little olive oil on the fish and place in the middle of the foil square
Sprinkle seasoning on fish then place a dill sprig and a slice of lemon on top
Seal the foil packet tightly and place on the grill for 30-45 minutes depending on the temp of the grill.
Serve your fish with the baked potatoes you made in the crockpot earlier that morning.
Yes, potatoes in a crock… Just wash, polk a few fork holes and wrap your potatoes in foil and put them in a crockpot or Ninja. Cook on High for 3-4 hours. They come out perfect every time.
*NOTE* You can put veggies under the fish if you like

Dessert can be done in a foil packet too… Yes Dessert!

Any kind of Meat or Veggies you like will work in a foil packet. You choose!
