Awe, the middle of the week, the weekend is in sight! Getting that camper ready for the BIG Memorial week trip? Well then throw this yummy dish together and start gathering up those misc items to be loaded up. If you load a little at at time you won’t be overwhelmed when that day comes to pull out of the driveway. Don’t forget all your kitchen tools…

Crockpot ,

Ninja 3 in 1 ,

Toaster Oven ,

Pressure Cooker   or

Instapot  and of course the

BBQ Grill    

You don’t want to spend all your time cooking, you want to relax and enjoy your family and friends.

Let these tools do all the work…

AND for those of us full-timers, well you know, we just like to make easy fast stuff to eat… That way we have more time to play our favorite games like Rummikub.

Today I’m making Pressure Cooker Chicken and Rice. I have made this recipe many times and it turns out perfect every time. The chicken is tender and the rice is so creamy. I think you will love this one as much as we do.

Pressure Cooker Chicken and Rice

2 boneless skinless Chicken Breast
1/2 cup celery, chopped
1/2 cup onions, chopped
1/2 cup broccoli florets 
1/2 cup carrots, chopped fine 
1 can Cream of Chicken soup
1 can Chicken Broth
2 cups of rice
Tony’s Chachere’s, to taste
Cut Chicken up in bite size pieces *
Brown pieces in the pressure cooker with Tony’s Chachere’s seasoning.
Mix together soup, broth and rice and pour over the chicken
Pressure cook for 15-20 minutes.
*NOTE* if the chicken is frozen, pressure it first for 15 minutes. Remove and set aside but keep the broth, it can be used instead of the canned broth.
FYI… Veggies are all optional. I have made this without the carrots and broccoli and it was just as good. BUT I just think it’s a good way to get the kids to eat their veggies and it looks pretty with all those colors.
