Thursday Drink with Lunch

Thirsty Thursday…

I hope you enjoyed last weeks drinks. I couldn’t resist the humor that went along with the Bloody Mary. LOL  I just love entertaining folks, I have that sometimes way out there, over the top sense of humor. But kids, you know it takes all kinds!

Let’s get to today’s drink…

Watermelon Cucumber Cooler


2 cups Watermelon seedless or seeds removed
1/2 cup Cucumber peeled, chopped, seeds removed
1/2 cup Ice

 2 to 3 tsp Lemon Juice
 2 T Honey
8 oz of Vodka
Combine all the ingredients in a blender.
Blend well until smooth.
Keep it in the fridge until your ready to serve.
Serve in a tall glass with ice, garnish with a slice of watermelon and cucumber
I thought this drink would be perfect now that watermelons are at their sweetest. I love watermelon and wish I could get it year round. But they’re only at their sweetest for a few short months out of the year. You can still get those personal melons but they’re not near as sweet as the summer melons.
For those perfect slices I use the mandoline  I love this kitchen tool! I use it for slicing potatoes and onions etc… it chops, slices, grates, It’s just the perfect tool… Do yourself a favor and put it on you kitchen tool list.
Today I’m adding a Lunch BONUS!
Chicken Salad
4 cup of cooked chicken
1 cup celery, chopped fine
½ cup mayonnaise
¼ cup Vlasic sweet pickle relish
1 teaspoon brown mustard
1 boiled egg, chopped fine.
½ cup onion, minced
¼ teaspoon Morton salt
¼ teaspoon McCormick black pepper
¼ cup grapes (optional)
Chop chicken, mix with washed chopped celery.
Add the chopped onions and sweet pickle relish, mix in the mayonnaise.
Season with salt and pepper to taste then mix in the brown mustard
Mix in the chopped boiled egg last.
Stir mixture until well combined, cover and refrigerate for at least one hour prior to serving.
Serve on your favorite bread with a slice of tomato and a lettuce leaf
OR on just on a wedge of lettuce with tomato slices
