Pot Luck favorites…
I did a survey on my Facebook group about what people take to Pot Luck dinners. Surprisingly I got mixed answers. Some don’t like to attend at all and some only take the smallest and most convenient thing(s) they can come up with. I feel you should take a dish that is enough to share with at least 15 people. I’m not saying you should make a meal to feed an army BUT let’s face it, if you have, say 20 people at the Pot Luck and you only bring 1 tray of Deviled Eggs est. 6 eggs (12 halves) to me is just not right. OR if you only bring a small bowl (2-3 servings) of Green Beans, REALLY!!!! Just my opinion! I’m guilty of thinking I need to bring enough to feed everyone BUT at least I bring a healthy pot full of food. My favorite thing to take to a Pot Luck is Chicken Spaghetti. It’s easy and you can make a lot of it and it’s pretty cheap. Just Sayin’
Here’s my recipe… I hope you enjoy it.
1 lb boneless, skinless chicken breasts
1/2 lb Velveeta cheese, regular or Mexican
1 lb spaghetti pasta
2 Tablespoons butter
2 Tablespoons olive oil
1 can cream of chicken soup, undiluted
1 can cream of celery soup, undiluted
1 can chicken broth
1 chicken bouillon cube
1 medium onion, chopped
1 bell pepper, red or green, chopped (optional)
pepper to taste
Cut chicken breasts in bite-sized pieces and brown in olive oil and butter
Remove chicken when completely done, about 10 minutes.
Boil spaghetti to just al dante* BUT not done (I do mine in the microwave)
Drain pasta after done and discard water. Set aside the pasta Do not rinse.
Mix soups and cheese heat until cheese is melted thoroughly, stirring occasionally to keep from scorching.
Stir Chicken and spaghetti into the soup and cheese mixture until everything is combined. (I used my Ninja Cooker to make it a one pot meal)
* Al dente…. In cooking, al dente /ælˈdɛnteɪ/ (Italian pronunciation: [al ˈdɛnte]) describes pasta that is cooked to be firm to the bite.
There are kitchen tools like the Microwave Pasta Cooker to use in the microwave to cook spaghetti. I really like making spaghetti in the microwave because you can cook it at the same time you’re browning the Chicken. I love my Ninja 3 in 1 it is so great to take to Pot Lucks because it has a buffet setting which keeps your food hot.
*NOTE* this recipe freezes very well too.
