Homemade Chicken Salad for Lunch

Yummy… There’s nothing better for lunch than a good Homemade Chicken Salad on toast OR a nice cold lettuce leaf. Today I’m sharing MY Own recipe and kids it is really good and so easy to make.

I start with a frozen boneless, skinless chicken breast and cook it in my small Pressure Cooker for 20 minutes. Yes, I said FROZEN straight out of the freezer. After the timer goes off I let the pressure cooker set for a few minute. Then I take the chicken out of the pressure cooker and cut it up into very small pieces. I think you’re going to love this recipe as much as I do. The recipe is for 4 people BUT it can be doubled for more as needed.


Homemade Chicken Salad

2 boneless skinless Chicken breast
2 chicken bullion cubes (one per breast)
1/4 cup water
1 c mayo, more or less to your taste
2 T sweet pickle relish
1/2 tsp celery seeds or 2 stalks of fresh celery, chopped
1/4 tsp salt
1/4 tsp pepper
Pressure cook chicken for 20 minutes with the bullion cubes and water, remove chicken and it let cool,
while chicken is cooling mix together Mayo, pickle relish, celery seed (or chopped celery), salt and pepper
When chicken has cooled, cut into very small bite sized pieces
Then combine chicken to Mayo mixture combining well.
Chill for at least 1 hour before serving.
Serve on toast or a chilled lettuce leaf with a side of fresh fruit.
There are many variations… like you could add chopped apples or grapes or pineapple chunks they’re all good. I just like mine simple.
