Creamy Chicken and Rice

Today I’m going to make Chicken and Rice in a small pressure cooker (recipe is for a Crockpot as well). I just love my small 8 cup PC, it’s just right for the two of us with no leftovers. This Chicken and Rice is so creamy and so good you will never want to cook it any other way. You can use a larger PC if that’s all you have. It works the same way, you can even double the recipe for the larger PC for a larger family of potluck dinners.


2 boneless, skinless chicken breasts or 4 tenders
1 cup rice
1 cup cheddar cheese
1 sm can cream of chicken soup
1 can drained corn
1 large onion chopped



Put 2 chicken breasts at the bottom of your Pressure Cooker.

Mix rice with cream of chicken soup and onions and pour mixture over chicken.

Cook in pressure cookers cook for 30 minutes

After 30 minutes release pressure… then stir in drained corn, top with cheese.

Replace lid for additional 5 minutes to let the cheese melt and the corn gets hot
