Omelette Casserole in Crockpot
26 ounces of frozen hash brown potatoes
1 lb of cooked and crumbled sausage
2 cups of shredded mozzarella cheese
½ cup of shredded parmesan cheese
½ cup of sun-dried tomato julienne cut
6 sliced green onions
Layer half of the potatoes in a sprayed crockpot, top with half of the cooked sausage and half of the cheese. Add half of the sun-dried tomatoes and green onions, Repeat. In a large bowl beat eggs, milk, salt, pepper and cayenne until well combined. Pour over the potato sausage mixture.
Cook on LOW for 8 hrs or HIGH for 3- 4 hours
Breakfast Sausasge and Egg Casserole
1 ½ cups all-purpose baking mix like Bisquick
1 ½ cups milk
1 teaspoon salt
3 dashes of hot sauce, I use Frank’s
½ lb. roll breakfast sausage
3 cups grated Cheddar cheese
3 cups grated Monterey Jack cheese
2 sm cans chopped green chiles, drained
1 sm jar sliced pimento, drained
Preheat oven to 350*Spray a 9 x 13-inch baking dish with cooking spray and set aside.Brown sausage in skillet, drain on a paper towel.In a large bowl, whisk together baking mix, milk, eggs, salt, and hot sauce.Stir in cooked sausage, cheeses, chiles, and pimento.Pour batter into sprayed baking dish.Bake for 45 minutes, or until golden brown and cooked through.Allow to cool for 15 minutes before slicing into bite-sized squares.Serve immediately, or wrap tightly and store in freezer or refrigerator until ready to use.
**HINT** A great side dish is Hash Browns done in the waffle maker or toaster.
E-Z Sausage Bake
1/2 lb breakfast sausage
1 small onion, chopped
1/4 bell pepper, chopped
pinch of crushed pepper
2 tsp butter
1 small can biscuits (5 count), Quartered
salt and pepper to taste
Pre-heat oven 350* Spray a small baking dish/pan with veg spray
Brown sausage, drain and place in sprayed baking dish/pan
In a bowl scramble eggs set aside
In the same skillet, you cooked sausage sauté onions and peppers and combine with sausage in a baking pan then pour scrambled eggs over the entire sausage mixture.
Place quartered biscuits over the top, bake for 20 minutes or until biscuits are golden brown and eggs are set.
