I love Mexican food and the hubs not so much but he does take me to get my fix from time to time. He wants to keep me happy and he does a great job too. Thanks, Honey… He likes fajitas, thank goodness and homemade is even better.

2 boneless skinless chicken breast
1 sm bell pepper, sliced
1 med onion, sliced
2 T evoo
2 T butter
2 T fajita seasoning
Slice chicken breast into small strips sprinkle on seasoning and brown in the oil and butter
When chicken is on longer pink add in onions and peppers and stir slightly just to get the veggies hot (you don’t want them soggy)
Remove from heat and serve in a warm tortilla.
Serve with your favorite condiments, sour cream, guacamole, hot sauce, pico and sides of refried beans and Mexican rice.
If you have any leftovers you can make Quesadillas….
