Cinco de Mayo Fiesta Day

I, Yi, Yi, Yi, Yi (I Like You Very Much). Did you know this song was/is a 1941 song.? It was written for the 1941 film, That Night in Rio, and was popularized by Carmen Miranda. The lyrics were written by Mack Gordon and the music by Harry Warren. Just a little Cinco de Mayo trivia for ya.

And since today is a Fiesta kind of day, let’s do as they do…

This recipe is a feast fit for King! Ole…

We start out with Chips and Salsa, then move onto the Main course of Beef Enchiladas with refried beans and Spanish rice. YUM

Ingredients for Enchiladas

1 lb ground beef
1 sm can green chilies
1 diced jalapeño (Optional)
1 med onion, chopped
2 cups Mexican Blend shredded Cheese
1 20 oz can Red Enchilada sauce
10 8″ flour tortillas
green onions, chopped
Sour Cream
Brown meat in large skillet with onions, jalapeño, and green chilies, and drain
Combine 1/2 the enchilada sauce and 1 cup cheese and mix well Spoon filling in each tortilla, roll up and place seam-side down in a 9×13 pan
Pour remaining sauce over the tops of the enchiladas and sprinkle with the remaining 1 cup of cheese
Bake at 350* degrees for about 30 minutes until cheese is bubbly
Top with Sour Cream and chopped green onions just before serving.
Surprise the family tonight, just add refried beans and Spanish rice along with Chips and Salsa for a great homemade Mexican Dinner for a fraction of the cost.

Spanish Rice*  I use Rice a Roni, rice
RefriedBeans* I use Old El Paso refried beans
