Today is a great day to do a brunch. For those of us who like to sleep in on Sundays, you know after a busy week you want something to last you through the day, right up until to supper time.
Here are a couple of great ideas…
First Something Savory…
Breakfast Egg Pocket Muffins
1 lb breakfast sausage
1/2 shredded cheese
2 tsp butter
2 T milk
1 can 8 croissants rolls
1 can of low-fat cream of mushroom soup
1 16 oz.container of low-fat sour cream
2 cups shredded sharp cheddar cheese
1 package of real bacon bits/or real bacon crumbled up as much or little as you want
Preheat oven to 370
Use a 13×9 casserole dish, spray with cooking spray
Pour the tater tots in the dish evenly, mix the soup and sour cream and half of cheese all together..
Spread evenly over the tots, sprinkle with bacon and the rest of the cheese, cover with foil.
Bake for approx 45 mins, I look for bubbling around edges and cheese is mostly all melted, remove foil sprinkle with green onions and SERVE!
Sometimes the tater tots aren’t super hot but the sour cream mixture is, so once you serve it and mix it all around the temp is perfect to eat!
Now, Something Sweet
1/2 C. pancake syrup (any brand you like, I used Mrs. Buttersworth)
1/3 C. packed light brown sugar
1/2 tsp. cinnamon
1/4 C. chopped pecans, optional
1/4 C. chopped almonds, optionalDirections:
Spray a fluted pan with non-stick spray. Combine the melted butter and syrup in a small bowl and set aside. In another bowl, combine the brown sugar, cinnamon, and nuts (optional). Place about half of the syrup mixture in the bottom of the pan. Then sprinkle half of the brown sugar mixture on top. Lay the biscuits on the bottom of the pan, overlapping edges (closely together) to form a ring. Top with remaining syrup and sugar mixtures. Bake at 375 degrees for approximately 20-25 minutes or until golden brown. Cool for 1 minute in the pan, then invert onto a serving platter and enjoy!
** You can use 1 1/2 tubes of the Pillsbury Grands buttermilk biscuits if 1 doesn’t’ seem like enough) and bake it for about 30 minutes.
Serve with your favorite breakfast drink Orange Juice or maybe a Mimosa, after all, it is Brunch, Right?
