I can’t take the credit for this recipe… OR can I??
I admit I saw this awesome sounding recipe on The Chew, Michael Symon made this the other day and it sounded delish. So today I’m going to make this dish for the hubs. Ed loves when I make sweet and savory dishes, I think his favorite just might be Mango Grilled Chicken, but that’s a recipe for another day. Could this be another fav?
Pork with Gingered Plums
4 4oz pieces of pork tenderloin, pounded to a 1/4-inch thickness
2 T olive oil
3 medium plums, pitted & sliced
2 T unsalted butter
2 tsp fresh ginger, peeled & grated
1/4 cup fresh cilantro, leaves only, roughly chopped (optional)
salt and pepper to taste
Preheat a large skillet over medium-high heat. Season the pork on both sides with salt and pepper. Add the olive oil to the pan. Arrange the pork in a single layer and cook, without stirring, until golden brown on one side, about 2 minutes.
Flip the meat, add the plums, and cook, stirring occasionally, until the plums begin to break down, about 2 minutes. Add the butter and ginger, season with salt and pepper, and cook for 1 minute.
Remove from the heat, stir in the cilantro, and serve.
Note* You can use your favorite stone-fruits in this recipe!
