Ninja King Ranch Chicken

Last night a little cool front blew in and kids let me tell you, it BLEW in… OMGees I think there must have been some 35 mph gust. Overnight it blew our flag off the pole, now it takes some kind of wind to do that. When we took the kids out last night it was blowing so I took down our signs but left the flag. Well, I guess I should have taken down the flag too. It was laying on the ground this morning, thank goodness it didn’t blow away…

Today I think I’ll make this delicious King Ranch Chicken in my Ninja 3 in 1. You can make it in your crockpot  if you don’t yet have a Ninja. They also make liners for crockpots to make clean up easy. BUT the liners for the crockpot are just a little too small so be sure to get the larger cooking bags so they fit in the Ninja cooker. Then you can just pull out the liner and throw it away and you’re done…

My Ninja 3 in 1 takes the place of my electric skillet, my crockpot(slow cooker), my oven and my deep fryer. Now I only have to store one kitchen tool instead of 4 big tools. Trust me when I say, when you live in your RV you need all the storage space you can get.

Ingredients

4 cups shredded cooked chicken
1 large onion, chopped
1 large green bell pepper, chopped
1 (10 3/4-oz.) can cream of chicken soup
1 (10 3/4-oz.) can cream of mushroom soup
1 (10-oz.) can diced tomatoes and green chiles
1 garlic clove, minced
1 teaspoon chili powder
12 (6-inch)  fajita-size corn tortillas
2 cups (8 oz.)  shredded sharp Cheddar cheese

 

Directions

Stir together first 8 ingredients. Tear ChiChi’s tortillas into 1-inch pieces; layer one-third of tortilla pieces in a lightly greased 6-qt. slow cooker. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.

Cover and cook on LOW 3 1/2 hours or until bubbly and edges are golden brown. Uncover and cook on LOW 30 minutes.
