I’ve noticed all the leaves turning colors and falling all around us the past couple of weeks. Is this a sign we’re going to have an early fall in Texas this year? I know they say the higher the rainfall the sooner the trees start to lose their leaves. Well, I guess you could say we got a plenty of rain here in south Texas with Hurrican Harvey, he dumped as much as 20″ to 58″ from Rockport to Beaumont along the Gulf coast.
The kids are back in school and the days are getting shorter. It’s time to start thinking about recipes that are going to keep us warm with cooler weather on its way… I have been making this awesome quick, easy and Low Carb Chicken Vegetable Soup. You can eat all you want and NOT feel guilty.
Chicken Vegetable Soup
1 Lg can of Tyson Chicken or 1 pre-cooked chicken breast, cubed
1 small onion, chopped
2 stalks of celery, chopped
1/2 cup corn (optional)
1/2 cup peas or green beans
1/4 head of cabbage, chopped
1/2 carrots, chopped
14 oz chicken broth
Tony Chachere’s seasoning to taste
Saute onions in a little butter, then combine all ingredients
Bring to a boil then reduce heat and simmer until all veggies are tender.
