Well kids fall IS in the air here in east Texas. All the leaves are falling and we’re having rain and some thunder this morning dew to a cold front. They say we’re going to get temps this week of highs in the 60s and lows in the 40s. Yep, folks, that’s a cold front for us… lol
The first thing I think of cooking when there is a bit of a nip in the air is something that will warm my insides. There are so many choices from soups to chili, This is the perfect time to get out those Ninjas and Pressure cookers. Let’s make something easy and yummy today. How about some good ol’ Hobo Stew to start. I first had this stew while on a Trail Ride back in my rodeo days, our Wagon Master made a huge pot over an open fire and boy was it good. Today I’m going to make it in a Ninja.
1/2 Lb Hamburger meat
2 carrots, chopped
1 onion, chopped
2 stalks Celery, chopped
1 Lg can tomatoes
1 cup corn
2 med potatoes, cubed
1 can Green Beans, drained (optional)
Brown HB meat and drain off excess oil
Combine all ingredients bring to a boil then simmer until all veggies are tender.
Just add some hot crusty bread, it’s great for dippin in the stew.

Debi’s Spicy Chicken Soup
1 Lg boneless skinless Chicken breast OR 1 Lg can of Chicken chunks, undrained
1 sm onion, chopped
1/4 bell pepper, chopped
2 stalks celery, chopped
1/2 c corn
1/2 c carrots
3 ox kale
1 can chicken broth
1 can black Beans, drained(optional)
pepper to taste
Cut chicken into cubes, season with Tony Chachere’s and pepper, sauté in your Ninja then add all other ingredients and simmer for 15-20 minutes OR if you are using a pressure cooker or instapot once Chicken is cooked through, Add in all additional ingredients and cook on the soup setting.
Serve with a side of Crackers or Crusty Garlic Bread
NOTE* Sometimes I add in a little cabbage.
