I made this delicious dish and just had to share it with you. The hubs and I are trying to stay away from rice and potatoes, SO, I have to be creative with a good filling side dish to go alongside the protein. Since I discovered riced cauliflower I’,m in hog heaven. There are so many recipes for riced cauliflower you would be amazed. For example, stir-fried Chinese rice or mix with butter, a little milk and blend with a hand mixer for a substitute for mashed potatoes and the list goes on and on…

Recipe of the day
2 TBSP Olive Oil
1 tsp Butter
1 bag Frozen Cauliflower
1/2 frozen Peas and Carrots
1 med onion, chopped
1 pod Knorr’s Homestyle Chicken Stock
1-1/2 cup water green onions, chopped and used as a garnish
DirectionsWith Olive Oil and Butter in a large skillet over med-high heat, saute onions. When onions are translucent add in cauliflower and cook until lightly browned. Onced the cauliflower is browned add in chicken stock and water
Reduce heat and simmer until liquid is reduced down.
Serve as a side with any meal instead of Rice.
Sprinkle chopped green onions for garnish…
